Sabaya is the pastry that gave us our name: thin sheets of dough layered by hand with clarified butter, then brushed with egg wash to give it a golden color when baked. Topped with black seeds and baked until golden, it is gently sweet, never heavy, and it is made to be shared.
We prepare every tray by hand in Dearborn. Order it frozen and uncooked to bake fresh in your own oven, or choose baked and we bake it for you. Cut it, drizzle honey over the top and serve it at breakfast, with afternoon tea, as an appetizer or after dinner.
Choose a small tray for the family table or a large tray for a gathering. Both come in white or wheat flour. Frozen trays have no extra charge. Baked trays are $10 more.

White sabaya: Enriched flour (bleached wheat flour, malted barley flour, niacin, iron, thiamin mononitrate, riboflavin, folic acid, potassium bromate), water, clarified butter (milk fat), whole eggs, milk, sugar, salt, vanilla, yeast, black caraway seeds, citric acid. May contain one or more of the following: soybean oil, vegetable oil.
Wheat sabaya: Enriched flour (bleached wheat flour, wheat flour, malted barley flour, niacin, iron, thiamin mononitrate, riboflavin, folic acid, potassium bromate), water, clarified butter (milk fat), whole eggs, milk, sugar, salt, vanilla, yeast, black caraway seeds, citric acid. Allergens: White sabaya contains eggs and milk. Wheat sabaya contains wheat, eggs and milk.
How to bake a frozen tray
Frozen sabaya is sold uncooked and bakes in about 20 minutes.
- Thaw for 1 to 2 hours at room temperature before baking.
- Preheat the oven to 420°F and bake for 17 to 20 minutes, until the top layer turns golden brown.
- Tent loosely with foil, or top with the plastic bag provided, for a few minutes so the crust settles.
- Cut with scissors or a pizza wheel and drizzle honey over the top.
Storage
Keep frozen. Uncooked sabaya keeps in the freezer for up to 1 year.
