This is the breakfast we make when there is no time for breakfast. Freshly cooked tawa bread, soft scrambled eggs and melted mozzarella, folded in half and finished in the oven so the cheese seals it shut. Ten minutes, one pan, no mess. It also travels well, which matters on school mornings.
Why tawa bread works here

Ingredients
Makes 1 large sandwich, enough for one hungry person or two kids.
- 1 tawa bread
- 3 eggs
- ½ teaspoon salt
- 2 teaspoons butter (or nonstick spray)
- ½ cup shredded mozzarella cheese
Directions
- Cook the tawa bread. Tawa bread comes uncooked. Cook it according to the package directions until brown on both sides, then let it cool for about 2 minutes so it is easy to handle.
- Preheat the oven to 350°F. Place the tawa bread on a baking sheet.
- Beat the eggs. Crack 3 eggs into a bowl, add the salt and beat with a fork until mixed.
- Cook the eggs. Heat a skillet over medium heat. Spray with nonstick spray or melt the butter. Pour in the eggs and cook for 3–5 minutes, stirring every 30 seconds or so, until just set. Soft is better than dry; they will finish in the oven.
- Fill the bread. Scoop the eggs onto one half of the tawa bread. Sprinkle the mozzarella evenly over the eggs.
- Fold and bake. Fold the empty half over the filling and press gently. Bake at 350°F for about 5 minutes, or until the cheese melts and holds the sandwich together.
- Cut and serve. Remove from the oven, cut in half and eat warm.
Variations
- Add greens. A handful of spinach stirred into the eggs in the last minute of cooking.
- Add heat. A spoon of sahawiq, the Yemeni green chili sauce, or a few slices of jalapeño.
- Add meat. Cooked turkey sausage, beef bacon or leftover shawarma, chopped and folded in with the cheese.
- Switch the cheese. Cheddar melts sharper; feta crumbles in and stays salty.
